CHOCOLATE ROOIBOS TEA CAKE


Dough:
50g (125 ml) cocoa
250ml very warm Rooibos Tea
4 large eggs, separated
300g (375 ml) sugar
125ml cooking oil
5ml vanilla essence
250g (450ml) cake flour
15ml baking powder
2ml salt

Method:

Pre-heat oven to 180 c
Use a cake pan of 20 – 23cm in diameter (prepare with butter / spray ‘n cook)
Mix cocoa and very warm Rooibos Tea until smooth.
Let mixture cool.
Whisk the egg yellow and add sugar little by little.
Whisk until light yellow and spongy.
Add the Rooibos Tea, cooking oil and vanilla essence into the egg mixture by stirring.
Sift the cake flour, baking powder and salt together.
Add the cake flour mixture to the whisked egg whites and fold the egg yellow mixture in with a metal spoon.
Add dough to the pan.
Bake for 30 minutes (preferable to use the middle level).
Enjoy !
